Risotto wild asparagus and prawns with lemon

Ingredients

  • 140 g risotto
  • 1 finely chopped onion
  • 1 clove garlic
  • 500 ml Vegetable broth
  • 100ml white wine
  • 1/2 bunch of wild asparagus
  • Peeled prawns (optional)
  • Parmesan

Preparation

  1. Finely chop the onion and garlic and sauté in a frying pan or saucepan with a tablespoon of oil for a few minutes.
  2. Cut the asparagus and fry together with the onion and garlic.
  3. Add the rice.
  4. Pour the white wine until it evaporates.
  5. Add the vegetable broth little by little, stirring constantly.
  6. When the rice is almost cooked, add the peeled prawns and then the Parmesan. Rectify salt if necessary.
  7. Remove from heat and cover for a couple of minutes.
  8. Serve hot.
