Ingredientes
Dough
- 180 gr wheat flour
- 100 gr butter
- 2 tablespoons of icing sugar
- 1 egg yolk
Meringue
- 4 egg whites
- 150 gr sugar
- 2 tablespoons cornstarch
For the filling
- 120 gr fine sugar
- Juice of 4 lemons Lemon Prim
- Zest of 2 lemons
- 80 gr butter
- 3 egg yolks and 1 whole egg
- 2 tablespoons cornstarch
Preparation
- In the Kitchen Aid (or wire whisk) mix the ingredients of the dough.
- Extend, place the dough in the tartlet molds and let it rest in the fridge for 1 hour.
- Preheat the oven to 180º and bake the dough for 15 minutes, with weights on top of them (beans, etc…)
- While we bake the dough, prepare the filling, mixing the ingredients except the butter in a saucepan over medium heat, stirring constantly.
Add the butter and stir. - Beat the eggs and pour into the mixture for a few minutes until it thickens.
- Remove from heat and let cool.
- Prepare the meringue by beating the mixture until stiff peaks are obtained. We add the sugar little by little.
- Pour the previous mixture into the molds with the ready dough and the meringue on top.
- Bake for 15-20 minutes until the meringue takes color
